Dallas:

Happiest Hour gets the volume but HG Sply Co rooftop on Lower Greenville has a better vibe. Less crowded, better food, same quality sunset.

Monarch at The National is the best view in all of DFW. 49 floors up, you can see the entire skyline. It's expensive but it's a special occasion spot.
